Apple Cinnamon Breakfast Biscuits

  • 2 servings vanilla protein powder
  • 3 tbsp sugar-free cheesecake pudding mix
  • 1c chopped apple
  • 1 can low sodium chickpeas (drained)
  • 3 large egg whites
  • 1/4c flaxseed meal
  • 1c rolled oats
  • 1 tsp baking soda
  • 1/8 tsp ground cloves
  • 1 tbsp cinnamon
  • cooking spray

Preheat oven to 350ºF and spray a cookie sheet with cooking spray. Puree chickpeas in food processor until smooth. Mix chickpeas and egg whites together in a medium bowl. Add all remaining ingredients and mix well until dough becomes thick. Drop large spoonfuls of dough onto cookie sheet about 2 in apart. Bake until golden, about 18-20 minutes. Makes about 15-20 biscuits.
