Apple Cinnamon Protein Pancakes


  • 1/2c plain rolled oats
  • 3 egg whites
  • 1/8 tsp vanilla
  • 1/8 tsp cinnamon
  • 1/8 nutmeg
  • 1 slice of granny smith apple diced
  • 1 oz crushed almonds or walnuts
  • Agave nectar

Combine all ingredients in a bowl. Mix well. Spray a griddle/skillet with cooking spray. Heat over medium heat. Pour small amount of pancake mixture on the hot surface in circular shape.

Cook until the pancakes are dry and bubbly on the edges. Bubbles should appear on top, as well. Lightly brown both sides. Top with unsweetened applesauce or a drizzle of agave. Makes one serving of pancakes.

Cinnamon also inhibits bacterial growth + food spoilage, making it a natural food preservative. I like to sprinkle over oatmeal, sweet potatoes or sliced apple, too!
