Baked Apples & Bosc Pears

  • 3 medium apples
  • 3 medium Bosc pears
  • 1/2 cup plain oats
  • 2 tablespoons coconut sugar
  • 1/2 cup cranberries
  • 1/2 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/2 tablespoons olive oil
  • honey or agave nectar
Cut apples and pears in half and remove core to make a small dip. Remove a small sliver off back of the halved apple/pear so it sits flat in a baking dish with the core side up.
Combine oatmeal, coconut sugar, cranberries, cinnamon, nutmeg, ground cloves and olive oil in a small bowl. Mix well. It will be crumbly!
Pack spiced oat mix equally into the hollow of each apple and pear. Drizzle lightly with honey or agave. Add just enough water to baking dish to cover the bottom of the dish.
Bake, uncovered, at 375° for about 30-40 minutes, or until apples and pears are tender and begin caramelizing in their own juices. Serve warm with sugar-free vanilla pudding sprinkled with cinnamon.
