Banana Chocolate Chip Walnut Protein Cookies

  • 3 servings vanilla protein powder
  • 1/2c whole wheat flour
  • 4 mashed bananas
  • 1/4c agave nectar
  • 1c old fashioned oats
  • 1 teaspoon salt
  • 1 teaspoon ground flaxseed
  • 1/2 teaspoon baking soda
  • 2 large egg whites
  • 1 1/2 teaspoons vanilla extract
  • 1/4c dark chocolate chips
  • 1/2c coarsely chopped walnuts
Preheat oven to 375º F. Combine all dry ingredients in a small bowl, except chocolate chips and walnuts. Set aside. Mash banana with a fork in a separate medium bowl.  Add remaining wet ingredients and mix until combined. Stir in dry ingredients from small bowl until just combined. Slowly add and mix in oats, chocolate chips and walnuts. Spoon 1 – 2″ scoops of dough onto baking sheets lined with parchment paper, spacing about 2″ apart. Bake cookies until golden brown and just set, 10-11 minutes. Cool on sheets for five minutes & store in an airtight container for up to two days.

    I really like the taste of this recipe, but definitely had a soft baked texture when I made it. Good flavor combination. Thank you!
