Coach K’s Stuffed Bell Peppers
- 4-6 medium green peppers
- 1 lb ground beef, turkey or chicken
- 1 package of Trader Joe’s or Uncle Ben’s Quick Cook Brown Rice
- 1 tbsp olive oil
- 1/2c chopped cilantro
- 1/2c diced red onion
- 1/2c diced celery
- 2 diced medium tomatoes
- 2 crushed garlic cloves
- 1/2 tsp sea salt
- 1/2 tsp fresh ground pepper
- 1 tsp paprika
- 1 tbsp chili powder
- 1 tsp red crushed pepper, or to taste
- 2 tbsp ketchup
Cut tops off peppers and remove seeds/white membrane. Rinse peppers under cold water. Place peppers in a large pot; cover with water and bring to a boil. Reduce heat, cover and simmer for 5 minutes. Drain peppers and set aside.
Cook meat with olive oil in a large skillet over medium heat until browned. Add all remaining spices (except ketchup), mixing thoroughly. Simmer for about 10 minutes.
In a large mixing bowl, combine meat, cooked brown rice packet and ketchup. Mix well. Stuff peppers with meat mixture and place upright in a 12″x 9″ baking dish. Bake at 350° for 20-25 minutes.
Optional: Top stuffed peppers with a little shredded Lifetime cheddar cheese just before peppers are done and bake until the cheese is melted.
