“Fast food” breakfast ideas

Hola, IgniteGirls! Are ya havin’ a good Monday? My little dude has been teething, which makes for a super cranky baby.

With a 10 month old, making myself a quick breakfast in under 10 minutes is crucial to starting my day with the right fuel. 

Maybe these healthy “fast food” ideas can help you too:

– Over-easy whole organic eggs, 4 minutes

– Piece of fresh fruit and handful of raw nuts, 1 minute to grab-and-go

– Ezekiel cereal with unsweetened almond milk and mixed berries, 1 minute

– Bacon and Egg White Scramble recipe, 5 minutes
(approved for Meal 1 when you add a serving of carbs from The IgniteGirls Life nutrition plan.)

  • oil-sprayed pan
  • 4-5 egg whites
  • 1/2 cup fresh spinach and/or broccoli
  • 1 slice of nitrate-free turkey bacon
  1. Separate eggs, cooking only the egg whites in an oil-sprayed pan on medium heat.
  2. Add spinach or broccoli and 1 slice of bacon chopped (this is for a smoky, salty flavor).
  3. Scramble egg whites, spinach and bacon as they cook. Optional: Add a little salsa!

– Apple Cinnamon Oatmeal Pancakes recipe, 10 minutes
(approved for Meal 2 from The IgniteGirls Life nutrition plan.)

  • 1/2 cup plain rolled oats
  • 4 egg whites
  • 1/8 tsp vanilla
  • 1/8 tsp cinnamon
  • 1/8 nutmeg
  • 1 slice of granny smith apple diced
  • 1 oz crushed almonds or walnuts
  • Agave nectar
  1. Combine all ingredients in a bowl. Mix well. Spray a griddle/skillet with cooking spray. Heat over medium heat. Pour small amount of pancake mixture on the hot surface in circular shape.
  2. Cook until the pancakes are dry and bubbly on the edges. Bubbles should appear on top, as well. Lightly brown both sides. Top with unsweetened applesauce or a drizzle of agave. Makes one serving of pancakes.

– Open Egg Sandwich recipe, 5 minutes

Add sliced tomato, scrambled egg whites and fat-free Lifetime Swiss cheese over Ezekiel toast.

– Peanut Butter Cookie Protein Smoothie recipe, 4 minutes
(approved for Meal 1 when you add a serving of carbs and use almond milk, OR Meal 2 when you add a serving of carbs from The IgniteGirls Life nutrition plan.)

  • 2 tbsp peanut butter (can be replaced with almond butter, or 2 oz raw nuts)
  • 1 serving vanilla protein powder
  • 6-8 oz unsweetened coconut milk
  • 1/8 tsp vanilla
  • 1/8 tsp cinnamon
  • 1/2 frozen banana
  1. Combine all ingredients, milk first.
  2. Puree in a blender.

– Greek Yogurt Parfait recipe, 3 minutes
(approved for Meal 1 from The IgniteGirls Life nutrition plan.)

  • 6-8 oz nonfat greek yogurt
  • 1/2 cup diced peaches (or other fresh fruit toppings of your choice)
  • 1/2 cup gluten-free, low sugar granola
  • optional: 1/3 cup unsweetened shredded coconut (approved for Meal 2 from The IgniteGirls Life nutrition plan.)
  1. In a bowl or cup, layer yogurt, fruit then granola.
  2. Repeat.

– Guilt-Free Protein French Toast recipe from The IgniteGirls Life, 10 minutes (pictured above)

– Pistachio Overnight Oats recipe, 3 minutes to prep the night before and ready to go in the morning.

– 5 Minute Apricot Oatmeal recipe, one my favorites inspired by my dad.

– Peanut Butter Cup Oatmeal recipe, 3 minutes
(approved for Meal 1 from The IgniteGirls Life nutrition plan.)

  • 1/2 cup plain rolled oats
  • 1/2 cup water
  • 1/2 – 1 serving chocolate protein powder
  • 1/2 sliced banana
  • 1 tbsp of natural peanut butter
  1. Mix oats, water and sprinkle protein powder into a small breakfast bowl.
  2. Cook in microwave until thickens.
  3. Top with sliced banana. Stir in peanut butter.

What are your favorite quick breakfast ideas? I guess it’s pretty obvious I like oatmeal. But really, it’s one of the best high fiber, low calorie grain choices. Plus, it’s super versatile and you can mix it, blend it, heat it.. kinda reminds me of this song. LOL.
