Mayo-Less Egg White Salad

  • 6 large hard-boiled egg whites, chopped (one yolk is optional)
  • 1/4c finely chopped celery
  • 1/4c finely chopped carrot
  • 1/4c finely chopped red onion
  • 1/4c plain 0% fat yogurt or fresh hummus
  • 1 tsp yellow or dijon mustard
  • 1/2 tsp fresh lemon juice
  • salt to taste
  • ground pepper to taste
  • Optional: 1/4c finely chopped sweet bell peppers (orange, red, yellow)
Mix all ingredients in medium bowl. Serve on a piece of Ezekiel toast or in a wrap with lettuce and tomato.
