Raw Nut Butter Protein Cookies

  • 3 servings vanilla or chocolate protein powder
  • 1/3c crunchy natural peanut/almond/pecan butter at room temperature
  • 1/4c whole ground flaxseed meal
  • 1/3 c rolled dry oats
  • 1 tsp raw dark cocoa powder
  • 1/4c agave nectar or unsweetened applesauce
  • 3 tbsp pure maple syrup

Combine all ingredients in a medium bowl stirring with a spoon slowly. Add the protein powder last one scoop at a time while stirring. Dough should be a thick, sticky consistency. Add tiny amounts of water or syrup if mixture is crumbly. Spoon one-inch dallops onto wax-cookie sheet. Freeze for a few hours and serve. You can also serve these as a bar and press into a wax-lined shallow 8×8″ pan, freeze and cut into squares.
