Try the gluten-free blueberry muffins!
- 2 bananas
- 2 cups frozen blueberries
- 2 whole eggs
- 1 1/4 cup almond/coconut milk
- 1 cup coconut flour
- 1/2 cup almond meal
- 1/2 cup plain rolled oats
- 1 tbsp vanilla extract
- 2 tbsp honey
- 1 tbsp baking powder
- 1/2 tsp salt
- Preheat oven to 375º F. In a food processor, puree bananas and eggs together.
- In a large bowl, mix the unsweetened almond/coconut milk, vanilla extract, honey and egg puree together. Add all remaining ingredients, except blueberries, and mix. Once stirred, fold in frozen blueberries.
- Spray muffin tins with oil, and fill muffin cups 2/3 full with batter. Bake until lightly browned and cooked through, approximately 28-32 minutes.
