Sugar-Free Cinnamon Pancakes

Hey hey! What’s up, IgniteGirls?

We are less than a week away from the end of the third annual Sugar Momma Challenge, where over 125 incredible women gave up SUGAR for an entire 30 days! How are you feeling? Full of energy and determination I hope! You’ve been posting all month long in our community Facebook group about your struggles, your celebrations (hellooooo, skinny jeans) and other adventures in going sugar free. As the challenge comes to a close, I want you to continue to have support and keep the momentum going. I don’t want this to be something that comes to an end only to have you eat every kind of sugar you can get your hands on like it’s the Last Supper. Come on. You are better than that, and so is all the hard work you put in this month. There’s no stopping you now, let me help you reach your goals.

After seeing some of the deliciousness going on at the end of that video, I think it’s time for some Sugar-Free Cinnamon Pancakes!

What you need for the pancakes:

  • 2 ripe, medium bananas (peeled)
  • 2 large whole eggs + 1 egg white
  • 1/2 cup plain oats
  • 1/2 cup unsweetened coconut or almond milk
  • 4 tsp ground cinnamon
  • 2 to 3 teaspoons coconut oil

What you need for the blueberry compote:

  • 1 1/3 cups frozen blueberries
  • stevia to taste
  • 1/2 tsp. vanilla
  • 1/4 cup water
  • 1/2 lemon fresh-squeezed

How to make them:

Pre-heat a griddle or skillet over medium heat with a light coating of coconut oil.

In a small pot, start the blueberry compote by putting all ingredients together and letting it come to a boil. Once boiling, let it simmer another 5-10 minutes, or until the blueberry skins “burst” and soften.

Next blend all pancake ingredients (minus the coconut oil you already put onto the skillet) in a magic bullet or food processor. Blend well, then pour into 3-4″ pancakes on the heated skillet. Brown one side, flip, brown the other. Top with blueberry compote.
