Sugar-Free Superfood Vegan Kale Salad

It’s not very often that there’s a recipe that successfully combines healthy, easy and tasty…

…but this kale salad takes the cake!

Only a few ingredients, a couple minutes of prep and you’ve got a gourmet salad! This kale salad is rich in folic acid from the dark green leaves of the kale, and also includes some incredible sources of EFAs, or essential fatty acids, via the olive oil, sunflower seeds and pine nuts. It’s sugar-free, vegan and makes for a great appetizer or side dish to any event.

Ingredients

  • fresh baby kale (washed)
  • 1/2 cup+ pine nuts
  • 1/2 cup+ raw sunflower seeds
  • 1/2 cup+ shaved parmesan
  • lemon juice
  • olive oil
  • sea salt

Directions
In a large bowl, put aside the amount of kale you would like for your salad. Add pine nuts and raw sunflower seeds. Next, add lemon juice, sea salt, shaved parmesan and olive oil. Toss. Taste. Add more of any ingredient if needed. Wet ingredients should moderately coat the kale. Top with another sprinkle of shaved parmesan and serve chilled!
