So why Crockpot Applesauce? Slow-cooking produces added sweetness!
Apples already contain natural sugar, also referred to as Fructose. Not only that, but if you bake them or heat them up in any way, they start to caramelize in their own juices, releasing and producing even more sugar. Agave nectar is a great example of this, derived from the sap of the agave plant. Once the sap is heated it creates a caramelized, sweetener in the form of a syrup. And, yes, this is even the case with “raw” agave which is just caramelized at a lower temperature (under 117 degrees to be considered raw), over a longer period of time.
