Turkey Bacon & Egg White Scramble


  • Pam-sprayed pan
  • 4 egg whites
  • 1/2c fresh spinach and/or broccoli
  • 1/2 slice of Jenny-O extra lean turkey bacon

Separate four eggs, cooking only the egg whites in a PAM-sprayed pan on medium heat. Add 1/2c spinach or broccoli and 1/2 slice of Jenny’0 bacon chopped (this is for a  smoky flavor). Scramble egg whites, spinach and bacon as they cook. Optional: Add a little salsa and low-fat cheese and/or wrap it up in a whole wheat tortilla for a green scramble breakfast burrito.
